You probably want to read a book on x86 assembly language, but the kernel uses a special version of the language which does not have the same syntax as how I first learned x86 assembly. The kernel uses special gcc inline asm assemble to embed the code within c code. You can do a lot in the kernel without ever touching the arch directory and it tends to be some of the most complex and close to the metal code.
