In XML[1] & is spelt & (& indicates the start of an entity
reference), Similarly < should be written < and > >. The latter is
only necessary where there is a chance of ambiguity (i.e. inside tags).
[1] And, strictly HTML too, although most browsers are lax on this
requirement.
