How does the {dollar} thing work in practice? Does the cataloguer just type $
and it gets automatically converted to the placeholder? Or do they have to
explicitly type "{dollar}"? If the latter, it'll generate some complaints.

IMO, the editor should do it like this: The subfield delimiter would show as
unicode DOUBLE DAGGER (or whatever is defined for it in syspref). It would be
typed in the editor with a key combination, eg. alt-D or something, not
directly typing the character itself. Typing the dollar sign would be just a
dollar sign.
(And subfield contents should be different color from the subfield code and
delimiter, of course)
