IMO, the editor should do it like this: The subfield delimiter would show as unicode DOUBLE DAGGER (or whatever is defined for it in syspref). It would be typed in the editor with a key combination, eg. alt-D or something, not directly typing the character itself. Typing the dollar sign would be just a dollar sign.
