I think the SIP config looks OK. As long as min_servers is n, you should be able to handle n concurrent connections.
I don't think the problem is that you are connecting two clients at a time. The SIP servers are running as each own process with a per connection session, and shouldn't interfere with each other. I'm sorry I don't know what could be wrong.
