I found this confusing, too. If you look at the page source for the "Edit item" page, the field for setting the "lost" status is marked as invisible. Instead, when you are looking at the biblio record, click on the "Items" tab at the left side of the page. Then you'll see a form where the "Lost status" can be changed.
