StarOffice 7.0 retains the "options" tab on the print dialog that lets
you select "Brochure" printing.

I formatted pages 5.5 width x 8.5 height, "landscape", .5" L&R margins,
1" top margin, 0.5" bottom margin with 0.3" separation from 0.2" footer
(for page number). Then selected print, selected duplex on (HP laserjet
5), "short-edge binding", landscape orientation, then options ->
Brochure and got front and back printing of a 12-page brochure in
correct order to fold in center and staple to make a booklet.

It might be difficult to do this if your printer can't do duplex, but
you might be able to use manual feed.
