Yes. Given that it's all going to one virtual disk, there is no point in multiple partitioning unless you have very specific reasons.

One consideration I had with the VM was to make a default image of maybe
4GB, and to be able to copy it, increase the size of the disk, and
resize or create partitions to be able to use it.  If I just create one
big / then it would be pretty tough to just resize my filesystem... I'd
probably have to do a lot of dd'ing between partitions or virtual disks,
in which case I might as well just create a new VM and install.

I'm pretty sure that VMWare server has utilities to do this. The utilities understand the filesystem, so they compact the filesystem and then do an expansion.

I don't know the details (never having done it), but I have seen lots of posts on the VMWare discussion boards about expanding disks after initial install.
