Can't you print to PDF?

IIRC, Adobe Acrobat will render to PostScript for printing. Instead of feeding it to a printer command, dump it into a file and you'll have your filled-in forms in PostScript. Application of ps2pdf will generate PDFs.

I don't think I'm understanding the process you're describing. Are you
suggesting to fill in fields as a postscript, then convert to pdf? Or to go to postscript and then back to an editable pdf. If so, will ps2pdf generate a pdf with fill-in fields?

As it stands, Acrobat Reader won't let me fill in fields in the form.
Acrobat will, but the only access I have to that is using windows.
