Nestor, On the server side you have several choices, the ones I use are icecast, ffmpeg and shoutcast.
On the client side there are even more options, the ones I use are ffmpeg, MuSE, Winamp (Icecast/Shoutcast plugin) For video streaming I've stick with ffmpeg since its flexibility and numerous format support.
