How much data can a writeable RFID store?
I seriously doubt it is enough for a complete medical history (how much
space does a single X-RAY take up?), and not likely enough for emergency
information (type and location of prosthetcs/metal pins, allergies,
current medication).

It may be enough for allergies, and mega important medical information,
given the right encoding.

I could not find a reference for how much data an RFID can store. The
only reference I could find was a single 128bit number.

16 bytes.

Not enough for medical history.
