Revisiting this idea, might it be a better idea to set up an EC2 server that mounts the S3 data store as an encrypted filesystem, and then simply do rsync backups to that? Or do I fall into the latency hole again? I realize it's not going to be fast, but when the resultant daily changeset is likely to be a matter of a couple of MB after the initial upload, I can easily tolerate that...
