My approach is to buy a relatively inexpensive used Thinkpad T series (I
have a T-30 at present), run all the fancy stuff on a server, and
connect using VNC or NX.

The Thinkpad T series have good support for Linux. You get more bang for
your buck by spending the money on a good server. Also, the server is
less likely to walk away than a laptop.
