Well, I'm not experienced in FreeBSD, but the procedure looks the same as on Linux. The setting will be the same zone file name that's in /usr/share/zoneinfo. Test it with mysql> SET GLOBAL time_zone = timezonefile; I don't have a FreeBSD machine to play with, so you'll have to look up the name in the directory. When it's working, put default-time-zone='timezonefile' in my.cnf.
