Actually, the question should be: Which desktop? The most likely answer is GNOME, since that is the default installation for Fedora 9. In that case the mixer application is gnome-volume-control. You can get to it by right-clicking on the the little speaker icon on the menu bar. Or you can run it directly from a command line.
