It shouldn't be any big deal.  Just run both throttle cables to a
common bellcrank on the firewall and a cable from there to
the carb/carbs.  The actual setup would differ from plane to
plane depending on engine, carb,etc.  I would suggest that
you have a friction lock on the pilot side only to avoid possible
problems.

I seem to recall some homebuilt/kit designs call for dual throttles.
Is it the Zenith designs maybe?  They use a center stick.
