Sounds like you just need to prime your oil pump. I had similar problems with N891JF the first time I rebuilt it and put it back together. I tried several things, and couldn't get it to prime just turning the engine over with the starter (plugs removed), until I nosed it over as far as I dared to get the oil pump as low as possible, and even then I had to prime the pump by injecting oil into the stock oil pressure sender hole until it wouldn't take anymore and was definitely primed. Then the pressure came right up and stayed there. Once primed, it's never a problem. And before somebody mentions it, I did put some light grease on the pump gears to facilitate priming during the rebuild, but that didn't do the trick.

One nice thing about the Corvair engine is that the oil pump is at the back of the engine, so has no problem priming the pump on a tail dragger. Also, you can modify an old distributor shaft and spin the oil pump through the distributor hole on the Corvair, priming everything in the engine, and pumping up the lifters before first startup. And since the top plate is removable, you can watch and hear the oil squirting out everywhere and know that you are good to go. I need to get back behind that Corvair.....which is still waiting for me to reassemble it on the work bench......
