For cleaning e-mails when forwarding messages to chat, I love ecleaner (sorry, Tamara, PC only). It's free, reliable, and very easy to use (just click on the smiley face). You can download it from http://ecleaner.tripod.com/. It was a lifesaver when I used to edit an e-newsletter and had to clean up all sorts of stuff in order to get a clean text. It does pretty much the same as Jean's recommendations, as well as cleaning up HTML.
