thank you to all those who sent in their pumpkin recipes, I love pumpkin too
and was poised to dash off my pumpkin fritter recipe just as Jeanette from
the Cape beat me to it.

It has been a week of recipes as for as my email Inbox has been concerned:
got these from a friend in the States, and another friend wrote in too
saying they work for her.

Breakfast muffin


Makes 1 serving



Easy breakfast done in a mug in the microwave.

Ingredients

1/4
 cup flax meal

1/2
 teaspoon baking powder

1
 t honey

1
 teaspoon cinnamon

1
 large egg

1
 teaspoon butter


Directions

Put the dry ingredients in a coffee mug.

Stir.

Then add the egg and the butter. Mix.

Microwave 1 minute (or more).





Muffin in a minute

1/4 Cup Flaxseed Meal

1/2 teaspoon Baking Powder

1/2 teaspoon cinnamon

1 tablespoon Splenda (optional)

1 egg


Mix everything together in a coffee cup. Cook for one minute in the
microwave. Turn the cup upside down to take the muffin out. If it looks wet,
let it sit for a minute or so. I have these for breakfast. You can add
blueberries, or try other additions. Some people add a tablespoon of cream
cheese before cooking.





Muffin In a Mug
12 Tbsp your Favorite Muffin Mix
4 Tbsp water or juice

Add in 1 Tbsp of anything like raisins, applesauce, chocolate chips, etc.

Seal Mug, and release vent cap. Microwave on 100% (high) power for 2min. &
20 sec.

Voila!! Muffin A LA Mug!!

MICROWAVE MUFFIN

Amount Measure Ingredient -- Preparation Method

1 whole egg
1/4 cup flax seed meal
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 tablespoon Splenda
1 tablespoon cream cheese
1 teaspoon olive oil

Break the egg in a coffee cup, then add the remaining ingredients. Mix well
and cook for one minute in the microwave. When done, invert the cup on a
plate to dislodge the muffin. If it isn't fully firm just let it sit for
another minute. Occasionally, I'll add a few blueberries in the mix, or top
it with sugar free raspberry preserves after it is done. A couple of
"spritzes" of butter spray gives it a great flavor as well. For those who
use the sugar free syrups, use those as a topping.

This muffin really swells up so please be sure to use at least a 12-ounce
coffee cup.


Makes one serving which provides: 359 calories; 15g protein; 28g fat; 15g
carbohydrate; 11g fiber; 370mg sodium.



variations I made

Using Egg Beaters (1/4 cup) and low-fat cream cheese you get the following
nutritional facts:
Makes one serving which provides: 278 calories; 13g protein; 19g fat; 15g
carbohydrate; 11g fiber; 376mg sodium.

Substitute oat bran for the flax meal and add 1/2 a small banana or 2
tablespoons unsweetened applesauce or any fruit puree. Also you can add in a
tablespoon of your favorite nuts.

Substitute wheat bran for the flax meal and add 2 tablespoons unsweetened
applesauce or any fruit puree. Also you can add a tablespoon of any chopped
fruit such as apples, peaches, plums, etc.

To any of the above basic recipes you may add:

1 teaspoon granulated citrus or zest.

A tablespoon of any flavored sugar-free syrup such as DaVinci's.

A tablespoon of sugar-free chocolate chips and a tablespoon of sugar-free
chocolate syrup.

An additional tablespoon of the cream cheese that has been left cold and
chopped in 1/4" dice. This makes a really nice, smooth taste in your mouth.

A tablespoon of any dried fruit if you can eat the sugar.

2 tablespoons of canned pumpkin and the additional cream cheese above.

The variations are endless. I hope that as you try these muffins, you think
up your own variations and post your results here to share with all of us.

My favorite of all the muffins I made this morning was the oat bran with
applesauce and walnuts or the pumpkin variation. I just can't decide which.
Guess I will have to make them again!



NOTES:

Sounds really good - More calories then I would usually eat for breakfast
though.  Egg Beaters is the way to go...

Maybe make two batches and break into three mugs...



Nancy, just a thought here. I thought the calories were high too but that is
the old 'diet' mentality thinking that got us in trouble in the first place.
Why wouldn't we want to eat 400 calories in the morning if we were getting a
full 1/4 CUP of the ancient and amazing flax seeds along with a bit of the
best oil we can eat and an incredible edible egg? Have I changed your mind
yet?

Think a bit further, in following a WLS diet, isn't it as important as ever
to eat well and eat all the nutrients we can? Isn't breakfast the most
important thing we can do for ourselves? How many Egg McMuffins have you
eaten in your lifetime? Or fill that space with whichever fast food
breakfast was your favorite Then tell me how healthy that meal was. When we
add the benefits in those just under 400 calories, there is no contest. The
muffin wins hands down and it tastes good too!

I will say that there is no way I can eat the whole muffin in one sitting. I
will cut them in half and have half at breakfast and then either a late
morning snack for the rest or with a bit of protein for lunch. Even so,
there are pleny of people that WILL be able to eat the whole thing and there
is nothing wrong with doing that. The calories will serve them well. We just
have to re-direct our thinking to remember that calories are not the issue.
Besides, when we had the bypass, we were forever left with the tool that
will work no matter how many years pass as long as we are sensible. I vote
that this muffin is sensible in spite of the calories as long as you are
taking into consideration the benefits that go along with the calories it
holds.

Okay, I will step down off my soapbox now! Sorry I was so long winded, I
just worry that folks put too much store in calories and fat and not enough
in a healthy combination of all nutrients.





Davinci's syrup Muffins


1/4 c flax
1 tsp cinnamon
1 egg
1/2 tsp baking powder
1 tbsp. coconut oil, melted
3-4 pumps Davinci's (hazelnut is best, others that work are caramel, dulce
de leche, vanilla, irish cream - anything non-fruity)

1 min 20 sec in the microwave. Slice in half and toast, spread with butter.



The regular(?) flax is dark, and I liked it with cocoa mix in it. The golden
flax and almond meal are lighter in color and both were terrific, IMHO.




One Minute Muffin

In a coffee mug
Combine:
2 TBS ground flaxseed
2 TBS wheat bran (NOT whole wheat)--this is basically fiber only
[optional) Small scoop chocolate whey protein powder
1/4 tsp. baking powder
1 packet Splenda
Cinnamon, pumpkin pie spice, allspice--whatever, to taste
Mix with:
1 egg
1/2 TBS (more or less) oil (I use coconut)
A little water if needed to mix
Microwave for ONE minute. Dump on a plate, and slice. Smear on cream cheese.

You can make endless variations of this batter. Use cheese/nuts/herbs to
make a savory version. Use peanut butter or other nut butter as a topping.
