Pins - great big pins to hang the bobbin pairs on temporarily out of the
way. I never did get the knack of the 'open' method so I work on a bolster
with palms up, big pins to hold the waiting bobbins (and one is always
unpinning and pinning and shifting bobbins - but you soon get used to it)
and use the 'closed' method - CT, for halfstitch, CTC for whole stitch -
it works for me.
