Hello guys,
I have got it working with ssmtp, msmtp and postfix, because sendmail
needs root permissions, whereby docker containers are not allowed to run
as root on our cluster.
We will not have that much email load, therefore the simple sendmail
wrapper msmtp should be enough.

true, but LAM depends on PHP's mail() method. This requires a local
sendmail or equivalent. You can use e.g. exim that contains a sendmail
wrapper.
So you are not bound to sendmail but can use any local mail server that
provides a sendmail wrapper.
