I followed Paul's instructions below and was able to install Snow Leopard, 
Windows 7 and OpenSoalris 2009.06 on a 15" MacBook Pro:

The only variations I did from Paul's instructions were:
1. Added two extra partitions at step 2 instead of 1. I made Solaris the 3rd 
and Windows the 4th partition.
2. At step 4 I didn't create the 1% partition.
3. When booted from Windows 7 it actually wanted me to reformat the partition 
as it doesn't like FAT32, so I did, and Windows 7 was happy.
4. I didn't need step 5 and 6.

I am having some problems with my OpenSolaris partition right now, namely 
Solaris doesn't recognize my wired or wireless network interfaces, as a result 
I have no way to update to a new version.  I will try to sort that out tomorrow 
and post an update.
