I don't think that's the problem.  The text I'm trying to display comes
from XML retrieved via HTTP.  If I run the same code without retrieving
it from HTTP, the text in both fields displays without the & even
though the XML does contain & (otherwise it wouldn't be legal XML). 
If the edit field always displayed the & I would think that it had
something to do with the field displaying plaintext, but it varies
depending on whether the XML was local or retrieved via HTTP.
