Hi, you download the CoC to a text file and sign that using GnuPG and your personal key. Publish your public GnuPG key to a keyserver of your choice, upload the signed file to Launchpad and you're done.
Using Thunderbird has the advantage of signing all your mails with your GnuPG key. This is not (easily) possible when using a web mailer.
