I'm using Windows XP Embedded with LabVIEW 7.0 built applications.  The
main difference between XP and XP Embedded is the fact that you can
strip out as many components from the operating system as you want.
Because it is still XP underneath it all I haven't seen any issues
running LabVIEW on XP Embedded compared to plain XP and you shouldn't
need any additional help from NI to run on XP Embedded.  The biggest
issue is simply learning how to use XP Embedded.  It can be fairly
complicated depending on what you want to do.  My goal was to boot and
run my program from CD and without any hard drives.  I was able to do
this but it was much more complicated than I expected.

There is a good book for getting started called "Windows XP Embedded
Step by Step."  For more complicated issues search msdn.microsoft.com
and post questions on the microsoft.public.windowsxp.embedded newsgroup.
One piece of advice I would give you regarding LabVIEW is that it is a
lot easier to build your XP Embedded OS first and then install your
LabVIEW application after you're done with the first boot on your target
machine.  It is much harder to include you're application in the build.
