There are workarounds, but they basically come down to using the CF to load a boot-loader that's capable of booting from USB (so one would still be booting of the CF, just not the whole OS but only the bootstrap code to boot from USB).

I guess it could be convenient to be able to boot something else without having to open the enclosure (and in the case of the WRAP board in the WRAP enclosure, even take the board out of the enclosure) - like, for doing upgrades, fixing a broken install, or something like that. For "production use" I wouldn't want to have an usb stick sticking out of the front of the box :-) I agree that sticking to floppy as a minimum requirement is good for us (if only to make sure we avoid bloat). People can install it on larger install media if they want to/need to, but giving up floppies just because new PCs usually don't ship with a floppy drive anymore would be a disservice to the project, in my opinion (it would be interesting to know though how many people use floppies and how many use other media, so at least we'd know how many of our current users we'd lock out of using LEAF. My guess is that its still a rather significant number, and it's most likely not going to change quickly, since LEAF works beautifully on rather old boxes).
