The most I've used is 6 ports, but you shouldn't run into any issues
with 8.  Just get 2 quad-port cards (or any other combination that fits
in the available expansion slots).  I'd recommend PCI (or PCIe) cards
only...no ISA, or you can run into issues with overlapping I/O ranges,
and the module loading could get pretty ugly.  Some ISA card drivers
also don't gracefully support multiple cards per system...pretty much
all PCI drivers work with multiple cards.
