That 125ºF is the "take out" (of oven) temp.  When your thermometer alarm signals the center of the meat is 125ºF you shut oven off and remove the roast.
Its temperature will go up about another 5º at its "peak" and then slowly begin to cool. (Of course in MN, it will do so RAPIDLY - esp when Tim doesn't run his heat!)  LoL
