The 7/8" diamond hole saw (35mm) is the best size, that I find for most 
projects, You can get the most out of the bone.  
My 1 1/4" set cuts very well, but I only get 3 sometimes 4 disks out of the 
bone using it.  
The 7/8" will normally give me 6 + depending on the size of bone I start 
with. And YES the thickness of the bone is much
better using the 7/8" cutter.

As far as color,  If the bone is still green ( new or fresh ), or it just 
has a color that I don't like. 
I will soak the bone after cutting, in Hydrogen Peroxide (2-3% drug store 
stuff, not laboratory quality .). 
for a few days/weeks to bring out the whiteness of the bone disk (as well 
at to remove to oily feel) form the bone disk. 
and then drying the bone in a dehumidifier until it is dry enough to use 
for my project.

I really enjoy using bone in my projects.  I like how it feels to the hand, 
and how it looks. (I think it looks like Ivory.)
I am still trying to find other ways to use bone in projects,   but so far 
this method it the best that I have found.
I have  been playing around with trying to cut staves out of the bone, and 
then gluing them together, sorta like making
how company's make bamboo into a lumber.  Im not sure how it will work? but 
I have been playing about with the idea, 
for a while.
