Instead of Unknown, I do MNU (maiden name unknown), LNU (for men), and FNU (first . . .). Picked this idea up from someone else. I like being able to keep the men and women unknowns separate for no particular reason.

If you entered "Unknown," changing the setting on the Data Format change won't alter it.

If you entered it, you can search for it as you search for any given name.
Also, if you want to get rid of Unknown as an entered, you can get a list of people using it by going to the Master Surname List, find it, highlight and click Show List.

I think you'll need to delete these people to get back to a completely blank unknown spouse. Legacy won't let you save a person without a name.

With patience you can get there.
However, others prefer to have "unknown" written throughout their file. Again, it's a matter of personal choice.

Word for Blank Records
Change to Just leave blank

For book reports, you may also want to go to the Marriage
Information
and tick "This couple didn't marry" and change the wording from
"married" to "had a child"
