Those options are only offered during a new install. It has been a while since I did that kind of install but if I remember correctly they were possible colour schemes.
To change the entire colour scheme go to Options > Change Colours Click the Choose an alternate colour scheme link to open the list of available colour schemes. Before you do though I suggest you click Options > Save the current colour scheme to save any customization of the colours you made since you installed. Give it a name like MyCustom. That way you will be able to reload your current colours after changing the scheme.
