It seems that the embedded codes only occur natively and hidden in Notes
fields, which are Rich Text Format. The codes are visible when they are
shown in lists where all fields are shown in a plain text format So a
decision was made to show the markup when showing a rich text field
within a text field, a possible alternative would have been to suppress
the codes but then it would be impossible to detect which text is bold,
italic etc. Despite the negative effect on appearance I think this is
the right decision since it makes direct editing of an RTF field
possible while displayed in a plain text field. For example in the Name
list it is possible to directly edit notes fields and although there is
no collection of formatting buttons you can apply formatting using
keyboard shortcuts which then put visible formatting codes in as text
markup.
