Go to Options > Customize > Set a cut-off age in section 2.3. Of course
you have to save the person with a date which makes them older than that
cut-off to have the living set automatically by the save. It will also
automatically change to No if you enter a death or burial date.

If you are working on a set of records where everyone you add is going
to be dead you can set Data Defaults section 4.1 to default the living
indicator to No or to the last used value. Then you will only need to
change those who are alive to Yes. I personally do not like the default
to No because that will set everyone you save to dead and can result in
privacy violations where details of living persons are revealed because
Legacy thinks they are not alive.
