For what it's worth.  I can only speak for Outlook Express, but "user
defined" is the font setting in your email program.  You can even
define font settings for the more popular "Western European (ISO)".

In Outlook Express, go to "Tools", "Options", "Read".  Click on "Font
Settings".  This will bring up the lists of font settings for the
various encoding types.  Highlight the one you are interested in,
"user defined", "western european (ISO)", or any of the others, and
you will see the fonts you are using in the list below "font
settings".  You can then select the font you would like to see in your
messages.  (I use Arial for Proportional fonts and Courier New for
Fixed-width fonts.)  Also, for those who would like smaller or larger
fonts, you can set the font size. (I use medium.)  Below that is the
encoding type.  Select the one you would like to use and "Set as
Default".

The font settings are also the ones you will see when you compose your
email message to sent to the list.  To find out which one you are
using, go to "Send" on the "Tools", "Options" menu.  There, click on
"International Settings".  Select the settings you would like to use,
i.e., "user-defined", western european (ISO)", etc. in the default
encoding list.  This is what will be used to send your mail.  (I use
the "western european (ISO).  This is also what "some" people on this
list look for when they view the properties of the messages you send
to this list.
