You can use the Event Clipboard (see icons bottom right of Event detail screen) to copy and paste events between people. Sounds like this may be the best compromise.

Some events (mainly censuses) refer to one person and some to the other.

I could just type in the details again for the correct person (which I will
probably end up doing) but trying to find an easier way of doing it.

I'm not sure to what degree the two couples are "mixed up."
Would it be easier to unlink the couples and then link them
in the right way? Then you could delete the inappropriate
events and notes.

If ALL of the events/notes are correctly applicable to one
person (but not the one they're attached to), could you just
change the name to the right one?
