Type several -- as many as needed to get the space you want.  So a 
report could read:

"John Murray married Mary ________ in London, England."

Or even: "John Murray married ________  ________." if both firstname 
and surname are unknown.

Changing the representation for "unknown" at any time is not a 
difficult thing.  The surname can be changed in one go in the Master 
Surname List.  The given names can be changed with a global Search 
and Replace of the Given Names and then the Alt. Given Name.  For the 
latter you just need to ensure that "Anywhere in field" and "Replace 
only found text with replacement text" are selected.
