I have dealt with this problem by linking Mary to a person called "an unknown man" (First name "an unknown" Surname "man" - no quotation marks - and NO capital letters.) The report then reads "Mary had a child with an unknown man. They had one child, George." I make sure the child has Mary's surname - not man. I only do this when I know it really is a case of identity unknown, or identity not being disclosed. The 'They' is not really ideal, but I can wear that, because it really was a "They" even if "He" is unidentified. Just thinking about it - you could also call the father "an unidentified" "man".
