If I know only the married name, I bracket it and change it when I learn the
woman's birth name.

I do something similar. I add the prefix "Mrs." thus in the name list I
would find the wife of John Brown with the other Brown family members. If I
don't know her first name either then she is "Mrs. Unknown Brown"

If I do not yet know their married maiden name. I add "married" to
the surname so I know that it is not the maiden name and when I find
the maiden name I change the name to the maiden name.

The convention that is most often used is to enter a person's birthname
in the surname field. Doing otherwise will cause confusion when sharing
data with others. Married names (and any other names) can then be
entered in Legacy's AKA field.
