Geoff, for future reference. I had the same question a while back but accidentally discovered that if I renamed the family.fdb file to something different, like familyx.fdb, it would disappear from the list the next time you open up Legacy. If you do it this way then the rest of your customization options wouldn't be lost. You can then rename it back to the original name and it still isn't in the list unless you open it again.
