I have a 7100/66 that is complete, boots and runs System 7. I don't know the specs on it, and I can't hook it up to find out because I don't have a monitor i can use anymore (sold the other stuff I had) ... it was probably upgraded on RAM.. couldn't say the hard drive space. Works fine, its a little yellow and has a small piece of plastic busted off the back (not visible from front).

I think there's a 40GB hard drive in it... computer turns on and chimes, has video, but for some reason I couldn't get it to boot from my Tiger disc. Tried two different (newer) drives, and no dice.
