Taco Casserole

1 package corn tortillas (they hold up better than
flour tortillas)
2 (15 or 16 oz.) cans refried beans
1 (8 oz.) package shredded cheddar cheese
1 pound ground turkey or lean ground beef
1 package taco seasonings
1 medium yellow onion
Dashes of hot sauce (optional to taste)

Brown meat and onion. Add taco seasoning and water.
Let simmer for 5 minutes.  Add a few drops of hot
sauce (optional).

In casserole dish (size not specified), put one layer
of corn tortillas, then spoon meat mixture on top.
Spoon layer of beans and put one layer of cheese.
Repeat until you run out of ingredients -- ending with
cheese.

Bake at 350 degrees for 30 minutes until cheese is
bubbly.  Serve with rice, sour cream, sliced avocado, etc.
