Clam Chowder
5
slices bacon
1-1/2 cups diced potatoes
1/2 cup shopped onions
1/2 cup water
1
tbsp bacon drippings
7-10 oz.of clams, undrained
1-1/2 cups evaporated milk
1
cup milk
3/4 tsp salt
1/2 of fried bacon
2
tbsp flour
another 1/2 cup milk
parsley
remaining 1/2 of fried bacon
Fry the 5 slices bacon until crisp. Crumble and set
aside.
Cook until tender about 15 minutes the diced potatoes, onions,
water, and bacon drippings.
Stir in and cook 5 minutes more the clams, evaporated milk,
regular milk, salt and 1/2 of the bacon.
Shake in jar until smooth or stir whichever is easier the flour
and 1/2 cup milk. Add to soup and
stir until thickened. Sprinkle parsley and the remaining
bacon over top to make pretty.
Makes about 6 servings
