Cream of Broccoli Soup
 
1 lg bag frozen chopped broccoli
4 cups chicken broth
1 stick butter
1/4 cup flour
1/2 to 1 cup grated cheddar cheese
2 tsp salt
 
Cook broccoli in chicken broth until tender.   Mash slightly with potato masher.  Add milk to mixture to make it creamy.   In saucepan, melt butter then gradually add flour.  Stir constantly.  Add salt.  Slowly add to broccoli soup mix.   Stir until thickened.  Add cheese.  May add chopped onion if desired.
