After getting through the LFS 6.0 book, I notice that there are the
following links that reference the linux source directory:
lib/modules/2.6.8.1/build -> /sources/linux-2.6.8.1
lib/modules/2.6.8.1/sources -> /sources/linux-2.6.8.1
Do I have to keep the linux source directory??? What are the
implications of removing the source and deleting the links?

You will need to keep the kernel source directory if you want to build
any kernel modules, though there are a few other programs that need to
find the kernel source. It's best to keep it.
