I did my PhD thesis on e-voting as did many other graduate students
funding by NSF's ACCURATE center:

A good overview at the time (that doesn't cover e2e much at all) was
this public comment we submitted to the US Department of Labor as they
clearly needed some basic knowledge dropped on them:

There is a **freaking ton** of work on e-voting out there, so I'm glad
to see other list members pointing to stuff that they consider
important. Holler if I can help further... I've been part of academic
teams that hacked voting machines in California [1] and Ohio [2] and
econometric analyses in Maryland [3] and I sit on the Board of Directors
of both The Verified Voting Foundation and the California Voter Foundation.
