Hello,

I was unable to reproduce this issue in the latest stable version as well as
the previous version (24.2.7.2).

1. Open Calc
2. Right click on a cell of column
3. Select Format Cells…
4. Select Date and the format DD/MM/YY
5. Enter “25 December 2024”

Tried saving and reopening the same document to see if I can see the format
change, but still couldn't see the reported result (switching back to MM/DD/YY
format).

Version: 24.8.2.1 (X86_64) / LibreOffice Community

CPU threads: 8; OS: macOS 13.6.3; UI render: Skia/Metal; VCL: osx

The only difference I can think of is that my test was conducted on macOS. 

I would appreciate it if you could let me know if I missed any steps in my
testing process.
