--with-distro=LibreOfficeMacOSX
--host=x86_64-apple-darwin
--build=x86_64-apple-darwin
--with-privacy-policy-url=https://hub.libreoffice.org/privacy/
--disable-dependency-tracking
--enable-release-build
--enable-macosx-code-signing
--with-lang=ALL

I think this is pretty similar to the arguments used in a release. Probably
--with-lang=ALL is not even necesary.
