Works for me as intened.
All the example words mentioned are correctly recorded after I type them and
confirm them with the Enter key. All the example words mentioned are correctly
suggested by the autocomplete function, and all the example words mentioned are
automatically completed correctly when I confirm the autocomplete suggestion
with the Enter key.
All umlauts in the example words are correctly recorded and also correctly
reproduced/completed.

What I just noticed – maybe that's relevant and the cause:

Me:
Locale: de-DE (de_DE.UTF-8); UI: 👉de-DE👈

If not already done, maybe close and restart LibreOffice after having installed
the Language pack and try the test again with the Language pack correctly
registered? When not closed and restarted after Language pack installation, I
always also get UI: en-US rather than UI: de-DE.
