cmd+N is indeed a new document... which makes sense. cmd + N to make text bold
doesn't make any sense... we have cmd+B for that by default. If you would like
to change that you can go to Writer for example (tools > customize > keyboard).

No, default save command in LibreOffice is cmd + S too... 'Save As' is
cmd+shift+S. cmd + G is as far I can see unused.

Strange. Are those commands really assigned to this shortcuts by default on
your computer? You mind reseting your user profile (see
https://wiki.documentfoundation.org/UserProfile#Resolving_corruption_in_the_user_profile)

I agree, but that's already reported in bug 48485 :-)
