Why not change that behavior to single-click? The GNOME HIG does have some things to say about this: https://developer.gnome.org/hig-book/stable/controls-status-bars.html.en It seems opening things on double click is (was?) a standard method for opening things from the status bar, provided the section to be clicked was inlaid such that it was discoverable. Recently, however, they've changed how status bars work in gedit to open a popover on a single click, which may be reflected in the new HIG if/whenever it comes out.
