I'm not sure if I understand this correctly - can you explain clearer what it
means?

I believe I do this.

When I reopen the dialog the character style is set back to <none> which leads
me to believe I'm doing something wrong.

That doesn't happen for me (tested on various versions)
If you can clarify I can try to bibisect. Also a test document might help.
